    莜面鱼鱼是我国北方地区传统特色裸燕麦主食,但其在冷冻贮藏过程中易发生品质劣变,本研究以生、熟两种状态的莜面鱼鱼为研究对象,进行了–18 ℃常规冷冻、–40 ℃速冻、–80 ℃超低温速冻、液氮速冻4种冷冻处理,通过测定生熟莜面鱼鱼的糊化特性、淀粉相对结晶度、蛋白质二级结构,综合比较不同冷冻方式对莜面鱼鱼的品质影响。结果表明,经–40 ℃速冻处理,熟制组56 d时回生值上升33.84%,相对结晶度为21.89%,游离巯基降幅22.57%;生制组56 d时回生值下降8.66%,α-螺旋降幅10.11%,该处理组样品的峰值黏度、回生值、相对结晶度及短程有序度的变化幅度均显著低于–18 ℃冷冻组,蛋白质二级结构更为稳定,凝胶网络结构保持完整,说明–40 ℃预处理可显著延缓生、熟莜面鱼鱼的品质劣变,显著优于–18 ℃冷冻贮藏,与–80 ℃超低温速冻和液氮速冻无较大差异。因此–40 ℃速冻对淀粉回生的抑制、蛋白质结构的保护均有较好效果,为莜面鱼鱼的长货架期保鲜与工业化规模化生产提供理论依据与技术参考。

    Abstract:

    Youmian Yuyu (fish-shaped naked oat noodles) is a distinctive traditional naked oat staple food in northern China, which suffers from prominent quality deterioration during frozen storage. The raw and cooked samples were received as research objects and made four freezing treatments: conventional freezing at –18 ℃, quick freezing at –40 ℃, ultra-low temperature quick freezing at –80 ℃, and liquid nitrogen quick freezing. The effects of different freezing methods on the quality of Youmian Yuyu were comprehensively compared by determining the Pasting properties, relative starch crystallinity, and protein secondary structure of raw and cooked Youmian Yuyu. After 56 d of frozen storage, –40 ℃ quick freezing achieved significantly better quality maintenance, with a 33.84% setback increase, 21.89% relative crystallinity, 22.57% free sulfhydryl reduction for cooked samples, and 8.66% setback decrease, 10.11% α-helix reduction for raw samples. For the –40 ℃ treated groups, the magnitude of changes in peak viscosity, setback value, relative starch crystallinity, and degree of short-range order were significantly lower than those of the –18 ℃ conventional freezing groups, with more stable protein secondary structure and well-maintained gel network structure. These results demonstrate that –40 ℃ quick freezing pretreatment can significantly delay the quality deterioration of both raw and cooked Youmian Yuyu, performing significantly better than –18 ℃ frozen storage, with no substantial difference compared to –80 ℃ ultra-low temperature quick-freezing and liquid nitrogen quick-freezing. –40 ℃ quick freezing effectively inhibits starch retrogradation and protects protein structure of Youmian Yuyu. These results provide a theoretical basis and technical reference for long shelf-life preservation and industrial large-scale production of this traditional staple food.
