Abstract:Arabinoxylans(AX) are one of the most important groups of hemicelluloses in the endosperm and outer layers of cereal grains, which can be used as a thickening agent, emulsifying agent, stabilizer or adhesive, etc in food processing and has beneficial effects on human health. Extraction methods for AX in grains were extensively studied in the recent years, which were solvent extraction, enzyme extraction and mechanical assisted extraction and other extraction methods. Because most AX and other components of the cell wall are closely connected in the form of covalent or non covalent bonds, the different extraction methods had different effects on the yield of AX. The advantages and disadvantages of different methods of extraction and purification of AX in grain were summarized to provide guidance for the development and utilization of the AX.
