    Abstract:
    The parameters of processing instant water chestnut was optimized with quality score and dehydration rate as indexes. The results showed that the sucrose concentration in impregnating solution was 15%, the ratio of water chestnut to impregnating solution was 1∶12 g/mL, impregnated for 9 h, dried at 60 ℃ for 2 h. The products instant water chestnuttasted sweet and crisp with light yellow surface, the quality score was 95.6 and dehydration rate was 10.5%. The floating range of the color difference was less than 2.5 and lustre value was 81.05 after storage for 60 days, the color and lustre of instant water chestnutwas basically stable.

    Abstract:
    The effects of mono-hydrophilic colloid (xanthan gum, guar gum, sodium alginate, hydroxypropyl methylcellulose and carrageenan) on the anti-aging of tartary buckwheat parfait were studied with sensory evaluation and hardness as indexes, and three kinds of hydrophilic colloid with better anti-aging effect were screened out.Based on this, the optimal anti-aging agent of tartary buckwheat parfait was determined by response surface analysis method. The results showed that the optimal anti-aging agent formula was 0.13% of xanthan gum, 0.17% of sodium alginate and 0.24% of carrageenan(calculated bytotal slurryweight). The storage time of tartary buckwheat parfait with compound hydrophilic colloids was prolonged by 2 times (14 days) of that without hydrocolloid the at -4 ℃.

    Abstract:
    On the basis of single factor experiment, the processing technology of microencapsulated camellia oleifera seed oil was optimized by response surface method. The results showed that the optimized parameters were as follows: solid content 19%, inlet air temperature 180 ℃, and feed flow rate 16 mL/min. The order of the effects of various factors on the embedding rate of microencapsulated camellia oleifera seed oil was: solid content>feed flow rate>inlet air temperature.

    Abstract:
    The effects ofmolar ratio of methanol to oil, ultrasonic power, catalyst dosage and reaction temperature on the yield of fatty acid methyl ester in transesterification reaction of lardare studied by single factor method with lard and methanol as raw material, KOH as catalyst. The results show that the optimum value for all the factors are methanol/oil molar ratio 6∶1, ultrasonic power 120 W, catalyst dosage 0.8% (based on oil) and reaction temperature 60 ℃. Response surface methodology is applied to optimize homogeneous KOH-catalyzed transesterification. The results show that the optimal condition are methanol to oil ratio of 5.8∶1, ultrasonic power of 135.91 W, reaction temperature of 52.78 ℃, catalyst dosage of 0.86%, in which theoretical conversion achieve 99.53%.

    Hundreds of millions of bacteria adhere to human intestinal epithelium, which are the participants of human health and physiological functions, and also an important target covered by the concept of comprehensive health. So far, the supplementation of prebiotics remainsare still one of the effective means to regulate intestinal microbiota and promote the growth of beneficial microbes. The by-productsof grain and oil processing are abundant in variety and yield, and many of them can be utilized by human intestinal microbiota, which are one of the sources of high-quality prebiotics, and also the important material basis and raw material source in the development of “microbial-oriented food”.

    Abstract:
    At present, the common food nutrients with hypoglycemic effect were divided into five categories: water-soluble dietary fiber, polysaccharides, flavonoids, saponins, trace elements. Animal experiments are mostly used to study the hypoglycemic effect of related nutrients. The hypoglycemic efficacy and its mechanism of the nutrients with different variety, different sources and different doses on diabetic mice and rats were systematically analyzed and summarized, in order to provide scientific and reasonable suggestions about the daily dietary choice for diabetic patients, and to offer reference for the research and development of health food suitable for diabetic patients.

    Abstract:
    Some standards can no longer meet the requirements of the development of the situation, since they have been used for quite a long time. The enterprise standard is the revision and improvement of the existing standard system, which can effectively make up for the shortcomings of the current standards.Therefore, based on national standard of wheat flour,combined with the document of the special wheat flour standard of Guangdong province, the problems existing in the enterprise standard of special wheat flour, such as incorrect expression and text irrational physical and chemical indicators, wrong normative reference, lack of product quality indicators, and the relatively simple standard category of the special wheat flour for the enterprise filing, are discussed. Some suggestions are proposed to provide some valuable references for the revision of enterprise standard.

    Abstract:
    Through the simulation of different climatic conditions (clear, cloudy day and rainy day) before the storage of high-quality japonica rice under laboratory conditions, the yellowing of freshly harvested high-quality japonica rice cultivar Nanjing 9108 under different climates was studied, and the yellowing was observed. The quality changes in the process were measured. The results showed that yellowing did not occur in 35 days at 25 ℃ and 30 ℃ under sunny conditions, and in the process of yellowing, the yellow-coloured index from 28.02 to 31.02, the fatty acid value was less than 25 mg KOH/100g, the husked rice yield was more than 81%, and head rice yield was less than 55%. Under rainy conditions, 80% RH, 25 ℃ and 30 ℃, there was no yellowing in 35 days. the heat reached 40 ℃, yellowing occured in 20 to 25 days. the heat reached 50 ℃, yellowing occurred in 15 days. 90% RH, 25 ℃ and 30 ℃, yellowing occurred in 35 days. the heat reached 40 ℃, yellowing occurred in 15 to 20 days, the heat reached 40 ℃, yellowing occurred in 15 days; During the yellowing process, the yellow-coloured index from 28.03 to 32.69, the change of fatty acid value was obvious and, followed by the husked rice yield, the first grade of Japonica rice was reduced to the second grade, and the head rice yield was lower than 50%, which was less than the requirement of the third grade of high quality Japonica rice.
    11  Effects of controlled atmosphere storage with nitrogen on yellowing and quality of high quality rice

    Abstract:
    High-quality rice with moisture content of 13.5% was tested at 35 ℃, 40 ℃ and 45 ℃ storage with nitrogen, compared with the control group without nitrogen. The degree of yellowing of high-quality rice and the quality change during the process of yellowing were researched by detecting yellowness index, fatty acid value, brown rice rate and head rice yield. The results showed that high temperature can cause yellowing of high quality rice. The higher the temperature, the higher the yellowness index, the deeper the yellowing degree. After storage at 35 ℃, 40 ℃ and 45 ℃ for 45 days, yellowness index with nitrogen was 1.2, 2.2 and 3.0 lower than that without nitrogen, which indicated that nitrogen gas regulation can effectively reduce the yellowness index. In the process of high-quality rice yellowing, the temperature was proportional to the fatty acid value, but inversely proportional to brown rice rate and head rice yield. After 45 days of storage, the difference of quality of the rice between nitrogen group and control group was most obviously, in which the fatty acid value of the nitrogen group was 7 mgKOH/100g lower than that of the control group, the brown rice rate was 0.20% higher and the head rice yield was 16.05% higher, which indicated that nitrogen gas can inhibit fatty acidsformation in high-quality rice, and decrease ofthe head rice yield, while have a little affection on brown rice rate. Therefore, in thepractical storage of high-quality rice, high temperature should be avoided as much as possible. If it is unavoidable, storage with nitrogen can be selected to postpone the yellowing and quality deterioration of high-quality rice.

    Abstract:
    High quality paddy is rich in nutrition and good taste, but the storage period of high quality paddy is obviously lower than that of common paddy. Under conventional storage conditions, the safe storage period usually did not exceed 1.5 years. Aiming at the problems of yellowing, mildew, caking, quality and taste deterioration under conventional storage conditions, the storage quality characteristics of high quality paddy was studied to explore the effect of environment on yellowing high quality paddy. The detection method for yellowed paddy was established. Thenew control and treatment technology for condensation and caking were developed. Shelf life of high-quality paddy in different storage conditions was defined. The storage process for high-quality paddy in low temperature was integrated into demonstration.

    Abstract:
    To clarify the control effect of Xylocoris flavipes on pests in simulated warehouses and on storage pests in high temperature and high humidity areas, the X. flavipes are put into the simulated warehouse with the temperature of 28±1 ℃ and humidity 50±10%, in a certain amount. The results showed that after 3 months the effects of controlling the four kinds of storage pests were more than 70%. The benefit-to-harm ratio has no significant influence on the storage of pests. The control effect of X. flavipes on four pests was Oryzaephilus surinamensis>Liposcelis bostrychophilus>Cryptolestes ferrugineus>Tribolium castaneum. In the district with high temperature and high humidity, the effects of controlling storage pests by X. flavipes are significant, which can effectively control pest outbreaks. Biological control of storage pests has the advantages of low cost and non-pollution, and can provide a new effective method to control storage pest.

    Cheyletuseruditus (Schrank) is widely existed in grain depots and warehouse, which is an ideal natural enemy resources with control potentialagainst pests and mites, especially for eggs and young larvae.In order to evaluate its biological control potential to Acarussiro (Linnaeus), functional response analyses were conducted of three C. eruditusstages, protonymph, deutonymph and female adult to four Acarussiro stages, eggs, larve, nymphs and adult.The results showed that the predation function of C.eruditusprotonymphs, deutonymphs and female adult all belonged to the HollingⅡtype to four stages of Acarussiro. The predation ability of female adult was the highest, and its attacking efficiency on different stages of Acarussiro was 0.913 (egg), 1.030 (larva), 1.017 (deutonymph), 0.989 (adult) respectively. The female adult of C.eruditus preferred to the larvae, with the maximum predatory efficiency 42.436 larvae per day. In terms of the predatory capacity of C.eruditus to Acarussiro, female adult showed the highest potential in preying different stages of Acarussiro except for the eggs, then was deutonymph. C.eruditus was the mostpotential native Phytoseiid species that might be used in Acarussiro control. This study laid a foundation parameter for the control of stored grain pest and mites by C. eruditus, and provided a reference for the further application of C. eruditus to control pest insects and mites.
    15  Study on accurate detection of grain moisture in granary based on radio frequency principle

    Abstract:
    Based on the linear correlation between grain moisture content and radio frequency(RF) signal, a new granary detection device was developed. A new RF detection circuit was designed to redesign the detection structure. Through the special detection circuit and detection structure, the accuracy of real-time online detection of grain moisture in the granary was improved, which provided a reliable hardware foundation for grain detection and monitoring.
